5 minutes from the mediaeval town of Segura is the Ondarre farmstead where Idiazabal has been made for over 200 years.
Winner of top awards. Their last prize-winning cheese was auctioned for the princely sum of €13,050, probably making it the most expensive cheese in the world.
The Goiburu family will be delighted to welcome you in front of their beautiful house surrounded by green pastures with the Aizkorri mountains in the background, and to show you their everyday work and the fruit of this, their cheese.
You'll meet the leading characters, the Latxa sheep and see how they're carefully looked after in the traditional way.
You'll have the chance to try making a cheese after visiting the craft cheese-making facilities and the farmstead.
The visit ends with a tasting of two kinds of cheese, a cream cheese and the one you've just made yourself. All this accompanied by home-made apple preserve, water, cider and farmhouse bread.
